Ingredients
– 500 g minced beef
– 1 tablespoon olive oil
– 1 onion, diced
– 2 garlic cloves, minced
– 1 red bell pepper, chopped
– 2 teaspoons chili powder
– 1 teaspoon cumin
– 400 g canned chopped tomatoes
– 400 g canned kidney beans, drained
– 1 cup beef broth
Method
1. Heat olive oil in a large pan over medium heat. Add onion and cook for about 5 minutes until soft.
2. Stir in garlic and red bell pepper. Cook for another 3 minutes, allowing the peppers to soften.
3. Add minced beef to the pan. Cook until browned, breaking it up with a spoon as it cooks.
4. Mix in chili powder and cumin. Then pour in the chopped tomatoes and beef broth. Stir well.
5. Add kidney beans and simmer for 20 minutes. Check seasoning and serve warm.
