Ingredients
– 4 chicken breasts
– 1 cup plain flour
– 2 eggs
– 1 cup breadcrumbs
– 1 tsp garlic powder
– 1 tsp paprika
– Salt and pepper
– 100 g butter
– 2 tbsp fresh parsley, chopped
– Lemon wedges for serving
Method
1. Start by placing each chicken breast in a plastic bag. Use a rolling pin to gently pound them until they are about 1 cm thick.
2. Prepare three shallow bowls. Put flour in the first one. In the second bowl, beat the eggs. Mix breadcrumbs, garlic powder, paprika, salt, and pepper in the third.
3. Coat each chicken piece first in flour, then dip it in egg, and finally press it into the breadcrumb mixture. Make sure they are well covered.
4. Melt the butter in a large frying pan over medium heat. Place the chicken schnitzels in the pan and cook for about 4-5 minutes on each side, until golden brown.
5. Transfer the cooked schnitzels to a plate. Sprinkle with chopped parsley and serve with lemon wedges on the side.
