Ingredients
500 g chicken breast
100 g chorizo sausage, diced
100 g Manchego cheese, grated
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
Salt, to taste
Pepper, to taste
1 cup baby spinach
2 toothpicks
Method
1. Preheat the oven to 180°C (350°F).
2. Place the chicken breast on a cutting board and carefully slice it open to create a pocket.
3. In a bowl, mix chorizo, Manchego cheese, spinach, smoked paprika, garlic powder, salt, and pepper. Fill the chicken pocket with this mixture.
4. Secure the opening with toothpicks and brush the outside with olive oil.
5. Bake for 30 minutes or until the chicken is fully cooked.
