Ingredients
600 g cooked chicken, chopped
1 cup frozen peas and carrots
1 small onion, diced
2 cloves garlic, minced
2 cups chicken broth
1 cup milk
1 tsp dried thyme
3 tbsp olive oil
3 cups baking mix
1 cup water
Method
1. In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until soft.
2. Stir in chicken, peas, and carrots. Pour in chicken broth and milk, then add thyme. Mix well and let simmer for 5 minutes.
3. In a separate bowl, combine baking mix and water, stirring until a dough forms.
4. Pour the chicken mixture into a baking dish. Spoon the dough over the top, covering it evenly.
5. Bake in a preheated oven at 200°C for 25-30 minutes until the biscuits are golden brown.
