Ingredients
– 500g chicken breast, diced
– 1 tablespoon olive oil
– 1 large onion, chopped
– 2 cloves garlic, minced
– 2 poblano peppers, chopped
– 1 teaspoon ground cumin
– 800ml chicken broth
– 1 cup corn (canned or frozen)
– 1 cup diced tomatoes (canned)
– 1 cup sour cream
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic, cooking until soft.
3. Stir in the diced chicken and cook until the chicken is browned.
4. Mix in the chopped poblano peppers and cumin, then pour in the chicken broth, corn, and diced tomatoes.
5. Simmer for 20 minutes, then stir in the sour cream until well combined.
