Ingredients
– 4 boneless chicken breasts
– 1/2 cup all-purpose flour
– 1/4 cup olive oil
– 125 ml chicken broth
– 2 tablespoons lemon juice
– 2 tablespoons capers
– 1/4 cup fresh parsley, chopped
– Salt, to taste
– Pepper, to taste
Method
1. Begin by pounding the chicken breasts until they are evenly thin. Season with salt and pepper.
2. Pour the flour onto a plate and coat each piece of chicken on both sides.
3. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for about 3-4 minutes on each side until golden brown.
4. Remove the chicken from the skillet and add chicken broth, lemon juice, and capers. Stir to combine and let it cook for a minute.
5. Return the chicken to the skillet and cook for another 2 minutes. Sprinkle with parsley before serving.
