Ingredients
– 500g ground chicken
– 1 small onion, diced

– 1 cup breadcrumbs
– 1/4 cup grated Parmesan cheese
– 1 egg
– 1 teaspoon Italian seasoning
– 4 cups chicken broth
– 2 carrots, sliced
– 1 cup spinach
Method
1. Combine the ground chicken, onion, garlic, breadcrumbs, Parmesan cheese, egg, and Italian seasoning in a bowl. Mix until well blended.
2. Roll the mixture into small meatballs. Set them aside on a plate.
3. Heat the chicken broth in a large pot over medium heat. Bring it to a gentle boil.
4. Carefully add the meatballs and sliced carrots to the pot. Cook for about 15 minutes or until the meatballs are fully cooked.
5. Stir in the spinach just before serving. Allow it to wilt, then serve hot.
