Ingredients
- 500g ground chicken
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 tablespoon sugar
- 1 teaspoon rice powder
- 1 small red onion, finely chopped
- 1 cup fresh herbs (mint and coriander), chopped
- 1-2 green chilies, sliced
- Lettuce leaves for serving
- 1 cucumber, sliced for garnish
Method
1. Heat a pan over medium heat. Cook the ground chicken until it’s browned and no longer pink, about 5-7 minutes.
2. Mix the fish sauce, lime juice, sugar, and rice powder in a bowl. Pour this over the cooked chicken.
3. Stir in the chopped onion, herbs, and green chilies. Cook for another 2-3 minutes to warm everything through.
4. Serve the chicken mixture wrapped in lettuce leaves for a fresh bite.
5. Garnish the dish with cucumber slices for extra crunch and freshness.
