Ingredients

– 500g chicken breast fillets
– 1 cup plain flour
– 2 large eggs
– 2 cups panko breadcrumbs
– 1 tsp salt
– 1 tsp pepper
– 1 cup vegetable oil
– ¼ cup tonkatsu sauce (or any sauce you prefer)
– Rice, for serving
– Sliced cabbage, for serving

Method

1. Start by preparing the chicken. Place each fillet between two sheets of plastic wrap and gently pound it to about 1 cm thick.
2. Set up three separate bowls. Fill the first with flour, the second with beaten eggs, and the third with panko breadcrumbs mixed with salt and pepper.
3. Dip each chicken piece into the flour, then the egg, and finally coat it with the breadcrumb mixture. Press the crumbs on to ensure they stick well.
4. Heat the vegetable oil in a large pan over medium heat. Once hot, carefully add the chicken and cook for about 4-5 minutes on each side until golden brown.
5. Remove the chicken from the pan and let it drain on paper towels. Serve with rice, sliced cabbage, and drizzle with tonkatsu sauce.
