Ingredients
– 3 cups cooked rice
– 1 tablespoon vegetable oil
– 2 chicken breasts, diced
– 2 eggs, beaten
– 1 cup mixed vegetables (like peas and carrots)
– 4 green onions, chopped
– 3 tablespoons soy sauce
– 1 teaspoon sesame oil
– Salt and pepper to taste
Method
1. Heat the vegetable oil in a large skillet over medium-high heat.
2. Add the diced chicken and cook until it is no longer pink.
3. Push the chicken to the side and pour in the beaten eggs. Scramble them until fully cooked.
4. Stir in the cooked rice, mixed vegetables, green onions, soy sauce, and sesame oil. Mix everything together.
5. Season with salt and pepper according to your taste. Cook for a few more minutes until heated through.
