Method
1. Begin by cooking the penne pasta according to the package instructions. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add sliced chicken and cook until browned.
3. Add onion and bell pepper to the skillet. Sauté these until they soften.
4. Stir in taco seasoning, diced tomatoes, and chicken broth. Simmer for about 5 minutes.
5. Mix in the cooked pasta and cream. Sprinkle cheese on top and let it melt before serving.
