Ingredients
– 400g fettuccine pasta
– 500g chicken breast, sliced
– 2 tablespoons olive oil
– 1 red bell pepper, sliced
– 1 green bell pepper, sliced
– 1 onion, sliced
– 1 tablespoon fajita seasoning
– 250ml chicken broth
– 100ml cream
– Salt and pepper to taste
Method
1. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
2. Heat olive oil in a large pan over medium heat. Add sliced chicken and cook until browned and no longer pink inside.
3. Toss in sliced bell peppers and onion. Sauté for about 5 minutes until vegetables are tender.
4. Sprinkle fajita seasoning over the chicken and veggies. Pour in chicken broth and cream. Stir well and simmer for 5 minutes.
5. Mix in the cooked fettuccine. Season with salt and pepper to taste. Serve warm.
