Delicious Chicken Enchilada Soup Recipe For Easy Weeknight Meals

Ingredients

– 1 tablespoon olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 can (400g) diced tomatoes
– 500ml chicken broth
– 1 can (400g) black beans, rinsed and drained
– 1 cup corn
– 2 cups cooked chicken, shredded
– 1 teaspoon cumin
– 1 teaspoon chili powder

Method

1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and cook until it becomes soft, about 5 minutes.
3. Stir in minced garlic and cook for another minute.
4. Add diced tomatoes, chicken broth, black beans, corn, shredded chicken, cumin, and chili powder.
5. Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes.
