Ingredients
– 8 chicken drumsticks
– 2 cups basmati rice
– 1 large onion, sliced
– 2 tomatoes, chopped
– 3 cloves garlic, minced
– 1 tablespoon ginger, minced
– 1 teaspoon turmeric powder
– 1 tablespoon biryani spice mix
– 500 ml chicken broth
– 1/4 cup fresh cilantro, chopped
Method
1. Begin by washing the basmati rice in cold water until the water runs clear. Soak it in a bowl for about 30 minutes.
2. Heat a large pot over medium heat and add a little oil. Add the sliced onion and cook until it becomes soft and golden brown.
3. Stir in the garlic and ginger. Cook for another minute, then add the chopped tomatoes, turmeric powder, and biryani spice mix.
4. Add the chicken drumsticks to the pot. Pour in the chicken broth and bring the mixture to a simmer. Cook for 15 minutes until the chicken is partially cooked.
5. Drain the soaked rice and add it to the pot. Cover and cook on low heat for about 20 minutes, until the rice is tender and the liquid is absorbed. Garnish with chopped cilantro before serving.
