Ingredients
– 500g chicken breasts, diced
– 1 onion, chopped
– 2 carrots, sliced
– 1 cup frozen peas
– 400ml chicken broth
– 1 teaspoon dried thyme
– 2 cups biscuit mix
– 1 cup milk
– 1 tablespoon butter, melted
– Salt and pepper to taste
Method
1. Preheat your oven to 220°C. Grease a baking dish with butter.
2. In a large pan, cook the diced chicken and onion over medium heat until the chicken is browned. Add carrots and peas, then pour in the chicken broth.
3. Stir in the dried thyme, salt, and pepper. Let it bubble for about 5 minutes.
4. In a separate bowl, mix the biscuit mix and milk until combined. Pour this mixture evenly over the chicken mixture in the baking dish.
5. Bake in the oven for 20-25 minutes, or until the top is golden brown and biscuits are cooked through.
