Ingredients
– 500 g chicken breast, diced
– 1 tbsp vegetable oil
– 1 onion, chopped
– 3 cloves garlic, minced
– 1 tsp ginger, grated
– 2 tbsp curry powder
– 400 ml coconut milk
– 500 g potatoes, cubed
– 100 ml chicken stock
– Fresh coriander, for garnish
Method
1. Heat the oil in a large pot over medium heat. Add the onion and sauté until it becomes soft.
2. Stir in the garlic and ginger, cooking for about 1 minute until fragrant.
3. Add the diced chicken and cook until browned on all sides. Sprinkle in the curry powder, mixing well.
4. Pour in the coconut milk and chicken stock. Then, add the cubed potatoes and bring the mixture to a simmer.
5. Cook everything for about 20 minutes, or until the potatoes are tender. Garnish with fresh coriander before serving.
