Ingredients
– 300g penne pasta
– 500g chicken breast, diced
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 250ml heavy cream
– 100g grated Parmesan cheese
– Salt, to taste
– Pepper, to taste
– Fresh parsley, chopped (for garnish)
– Optional: Peas or spinach
Method
1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
2. Heat olive oil in a large pan over medium heat. Add the diced chicken and cook until browned and fully cooked, about 7-10 minutes.
3. Stir in the minced garlic and cook for about 1 minute until fragrant.
4. Pour in the heavy cream and bring it to a gentle simmer. Then, mix in the grated Parmesan cheese until melted and smooth.
5. Add the cooked penne pasta to the sauce, stirring everything together. Taste and season with salt and pepper. Garnish with parsley before serving.
