Chettinad Keerai Mandi Recipe with Amaranth Greens
Ingredients
1 cup rice
2 cups water
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon urad dal
1 small onion, finely chopped
1 teaspoon ginger-garlic paste
2 cups amaranth leaves, roughly chopped
1 tomato, diced
Salt to taste
Method
Heat oil in a large pan over medium heat.
Add mustard seeds and urad dal, cooking until they turn golden brown.
Stir in the chopped onion and sauté until it softens.
Mix in the ginger-garlic paste and diced tomato, cooking until the tomato breaks down.
Add chopped amaranth leaves and salt, then pour in the water. Bring the mixture to a boil, then add the rice. Cover the pan and let it simmer until the rice is cooked.
