Cheesy Zucchini Soup Recipe
Ingredients
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
500 g zucchini, chopped
4 cups vegetable broth
1 cup milk
200 g cheese, grated
Salt and pepper, to taste
1 tsp dried basil
Fresh parsley, for serving
Method
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for about 5 minutes until softened.
2. Stir in the minced garlic and cook for another minute until fragrant.
3. Add the chopped zucchini to the pot, cooking for about 5 more minutes until it starts to soften.
4. Pour in the vegetable broth and milk, bringing the mixture to a simmer. Cook for 15 minutes.
5. Blend the soup until smooth, then stir in the cheese, dried basil, salt, and pepper. Serve hot with fresh parsley on top.
