Ingredients
– 9 lasagna sheets
– 2 cups spinach, fresh
– 1 zucchini, diced
– 1 carrot, grated
– 1 cup cottage cheese
– 2 cups shredded cheese
– 1 cup pasta sauce
– 1 teaspoon dried oregano
– 1 teaspoon olive oil
– Salt and pepper to taste
Method
1. Preheat the oven to 180°C.
2. In a frying pan, heat olive oil and sauté the zucchini and carrot for about 5 minutes until soft.
3. Mix spinach, cottage cheese, and oregano in a bowl. Season with salt and pepper.
4. Spread a thin layer of pasta sauce on the bottom of a baking dish. Place 3 lasagna sheets on top.
5. Layer half of the vegetable mixture, followed by half of the shredded cheese. Repeat layers and finish with sauce and cheese on top. Bake for 30-35 minutes until golden.
