Ingredients
– 500g ground turkey
– 400g canned black beans, drained
– 300g corn kernels, frozen or canned
– 1 packet taco seasoning
– 200ml water
– 1 cup salsa
– 2 cups shredded cheese
– 2 cups cooked rice
– 1 avocado, diced
– Fresh coriander, for garnish
Method
1. Start by cooking the ground turkey in a large pan over medium heat until browned.
2. Add the black beans, corn, taco seasoning, and water to the pan. Stir everything together and simmer for about 5 minutes.
3. In a separate pot, warm the cooked rice.
4. Create your bowls by layering rice at the bottom, followed by the turkey mixture.
5. Top with salsa, shredded cheese, avocado, and fresh coriander before serving.
