Ingredients

– 1 cup of chicken broth
– 1/2 cup of onion, chopped
– 1 tablespoon of olive oil
– 1/2 teaspoon of garlic powder
Method
1. Start by heating the olive oil in a large skillet over medium heat.
2. Add the chopped onion and diced chicken. Cook until the chicken is browned.
3. Stir in the diced tomatoes, corn, taco seasoning, garlic powder, and chicken broth. Bring the mixture to a simmer.
4. Mix in the cooked rice and half of the shredded cheese. Stir until everything is well combined.
5. Top the dish with the remaining cheese and cover the skillet until the cheese melts.
