Ingredients
– 400 g pinto beans, canned
– 1 onion, chopped
– 2 cloves garlic, minced
– 400 g diced green chiles, canned
– 1 tsp cumin
– 1 tsp chili powder
– 1 cup cheese, shredded
– 2 tbsp olive oil
– Salt, to taste
– Pepper, to taste
Method
1. Start by heating the olive oil in a large pan over medium heat.
2. Add the chopped onion and cook for about 5 minutes until it becomes soft.
3. Stir in the minced garlic and cook for 1 more minute.
4. Add the pinto beans, green chiles, cumin, and chili powder. Mix well and season with salt and pepper. Let it simmer for 10 minutes.
5. Sprinkle the shredded cheese on top, cover the pan, and cook for an additional 5 minutes until the cheese melts.
