Ingredients
– 400 g pinto beans, canned, drained
– 1 cup green chile, diced
– 1 cup shredded cheese
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon chili powder
– 1 tablespoon olive oil
– Salt, to taste
– Pepper, to taste
Method
1. Heat the olive oil in a medium-sized pot over medium heat.
2. Add the chopped onion and minced garlic. Sauté for about 3-4 minutes until softened.
3. Stir in the ground cumin and chili powder, cooking for another minute.
4. Add the drained pinto beans and diced green chiles. Mix everything well and cook until heated through.
5. Remove from heat and stir in the shredded cheese. Season with salt and pepper to taste.
