Delicious Cheese, Courgette & Spinach Filo Pie Recipe

Ingredients

– 1 large courgette, grated
– 200 g fresh spinach, chopped
– 200 g feta cheese, crumbled
– 1 cup ricotta cheese
– 3 eggs
– 1 teaspoon dried oregano
– 1 packet of filo pastry
– 100 ml olive oil
– Salt and pepper to taste
– Optional: sesame seeds for topping

Method

1. Preheat your oven to 180°C (350°F). Grease a pie dish with some olive oil.
2. In a large bowl, mix courgette, spinach, feta, and ricotta. Stir in eggs, oregano, salt, and pepper.
3. Carefully layer sheets of filo pastry in the pie dish, brushing each layer with olive oil.
4. Pour the filling into the dish, spreading it evenly. Fold the edges of the pastry over the filling.
5. Bake for about 30 to 35 minutes, until the pastry is golden. If using, sprinkle sesame seeds on top before serving.
