Ingredients
– 2 medium courgettes, grated (about 3 cups)
– 200 g fresh spinach, chopped
– 200 g ricotta cheese
– 150 g feta cheese, crumbled
– 1 cup grated mozzarella cheese
– 1 egg
– 2 tbsp olive oil
– salt and pepper, to taste
– 8 sheets of filo pastry
– 1 tsp dried oregano
Method
1. Preheat the oven to 190°C (375°F). Prepare a baking dish by lightly greasing it with olive oil.
2. In a large bowl, mix the grated courgettes, chopped spinach, ricotta, feta, mozzarella, and egg. Season with salt, pepper, and oregano. Combine all the ingredients well.
3. Lay out one sheet of filo pastry on a clean surface. Brush it lightly with olive oil. Place another sheet on top and repeat until you have four layers stacked.
4. Spoon the cheese and vegetable filling into the center of the layered pastry. Fold the edges over to create a parcel. Repeat this process with the remaining sheets and filling.
5. Transfer the parcels to the prepared baking dish and bake for 25-30 minutes or until golden brown. Serve warm and enjoy.
