Ingredients
– 450 g broccoli
– 2 tablespoons olive oil
– 1 lemon (juice and zest)
– 2 tablespoons Worcestershire sauce
– 1 tablespoon Dijon mustard
– ¼ cup mayonnaise
– 50 g grated Parmesan cheese
– 1 clove garlic (minced)
– 2 cups croutons
– Salt and pepper to taste
Method
1. Start by preparing the broccoli. Trim off the ends and cut it into bite-sized pieces.
2. Heat a large frying pan over medium-high heat. Add the olive oil. Once hot, toss in the broccoli. Cook for about 5 minutes until it’s charred and tender.
3. In a bowl, mix together the lemon zest, lemon juice, Worcestershire sauce, Dijon mustard, mayonnaise, and minced garlic. Whisk until smooth.
4. Remove the cooked broccoli from the heat and let it cool slightly. Toss the broccoli in the dressing.
5. Add the grated Parmesan, croutons, salt, and pepper. Mix everything together and serve immediately.
