Ingredients
– 1 medium celeriac (about 400 g), peeled and diced
– 1 ripe pear, peeled and diced
– 1 onion, chopped
– 2 garlic cloves, minced
– 2 tablespoons olive oil
– 600 ml vegetable broth
– 100 ml cream
– Salt, to taste
– Pepper, to taste
– Fresh parsley, for garnish
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
3. Stir in the diced celeriac and pear, cooking for about 5 minutes.
4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 20 minutes until the celeriac is tender.
5. Blend the soup until smooth. Stir in the cream and season with salt and pepper. Garnish with parsley before serving.
