Ingredients
2 cups all-purpose flour
1 large egg
1/4 cup water
1/2 tsp salt
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 cup spinach, chopped
1 clove garlic, minced
Salt and pepper to taste

Method
Combine flour and salt in a mixing bowl.
Make a well in the center and add the egg and water.
Knead the mixture on a floured surface until smooth.
Roll the dough into thin ropes and cut into small pieces to form cavatelli.
Cook the cavatelli in salted water for about 3 minutes, then mix with ricotta, spinach, garlic, and olive oil in a pan.
