Ingredients
1 medium cauliflower, chopped
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and pepper to taste
8 small tortillas
1 cup shredded lettuce
1 cup diced tomatoes
1 avocado, sliced
Method
1. Preheat the oven to 200°C.
2. Toss the chopped cauliflower with olive oil, cumin, smoked paprika, garlic powder, salt, and pepper in a large bowl.
3. Spread the seasoned cauliflower on a baking sheet and roast for 25-30 minutes until tender and slightly crispy.
4. Warm the tortillas in a dry pan or microwave.
5. Assemble the tacos by adding roasted cauliflower, lettuce, diced tomatoes, and avocado slices to each tortilla.
