Ingredients
– 1 medium cauliflower, chopped into small pieces
– 2 cups vegetable broth
– 1 clove garlic, minced
– 4 tablespoons unsalted butter
– ½ cup milk
– Salt, to taste
– Pepper, to taste
– Fresh herbs, optional for garnish
Method
1. Bring vegetable broth to a boil in a large pot. Add chopped cauliflower and minced garlic. Cook until the cauliflower is tender, about 10-15 minutes.
2. Drain the broth, keeping a little on the side in case you need it later.
3. In a blender or food processor, combine the cauliflower, garlic, butter, and milk. Blend until smooth. Add salt and pepper for flavor.
4. If the mixture is too thick, add a bit of reserved broth until you reach your desired consistency.
5. Serve warm, garnished with fresh herbs if using.
