Cauliflower in Coconut Milk Curry (Gobi Ki Sabzi)
Ingredients
1 medium cauliflower, cut into florets
2 tablespoons oil
1 teaspoon cumin seeds
1 onion, chopped
2 garlic cloves, minced
1-inch piece ginger, minced
1 teaspoon turmeric powder
1 teaspoon red chili powder
400 ml coconut milk
Salt, to taste
Method
Heat the oil in a large pan over medium heat.
Add the cumin seeds and let them sizzle for a few seconds.
Stir in the chopped onion, garlic, and ginger. Cook until the onion is soft.
Mix in turmeric and red chili powder, then add cauliflower florets. Stir well to coat the florets.
Pour in the coconut milk and sprinkle with salt. Simmer for about 15 minutes until the cauliflower is tender.
