Ingredients
– 1 medium cauliflower, chopped
– 1 cup giant couscous
– 2 tbsp olive oil
– 1 lemon, juiced
– 1 cucumber, diced
– 1 cup cherry tomatoes, halved
– 1/2 cup parsley, chopped
– Salt, to taste
– Pepper, to taste
– 1/4 cup feta cheese, crumbled
Method
1. Begin by cooking the couscous according to the package instructions. Drain it and let it cool.
2. Fill a pot with water and bring it to a boil. Add in the cauliflower and cook until tender, about 5 minutes. Drain and set aside.
3. In a large bowl, mix together the cooled couscous, cauliflower, cucumber, and cherry tomatoes.
4. Drizzle olive oil and lemon juice over the mixture. Then, toss in the chopped parsley, salt, and pepper.
5. Finally, sprinkle feta cheese on top before serving.
