Delicious Carrot Lemon Rice Recipe: A Flavorful Vegan Delight

Ingredients
1 cup basmati rice
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon urad dal
1 carrot, grated
1 lemon, juiced
1/4 teaspoon turmeric powder
Salt to taste
Green chilies, chopped (optional)
Fresh coriander, chopped (for garnish)

Method
Cook the basmati rice according to package instructions and set aside when done.
Heat oil in a pan over medium heat. Add mustard seeds and urad dal, and let them pop.
Stir in the grated carrot and cook for a few minutes until it softens.
Mix the cooked rice, lemon juice, turmeric powder, and salt into the pan. Add green chilies if desired.
Garnish with chopped fresh coriander before serving.
