Ingredients
– 2 cups grated carrots
– 4 cups milk
– 1/2 cup sugar
– 1/4 cup rice
– 1/2 teaspoon cardamom powder
– 2 tablespoons ghee
– 10-12 cashews
– 10-12 raisins
– A pinch of saffron strands
– 1/2 teaspoon vanilla extract
Method
1. First, soak the rice in water for about 30 minutes.
2. Next, boil the milk in a large pot. Add the soaked rice to the boiling milk and cook until the rice is soft.
3. Stir in the grated carrots and sugar. Cook on low heat for about 15 minutes.
4. Add cardamom powder and saffron strands. Mix well, then remove from the heat.
5. In a separate pan, heat ghee and fry cashews and raisins until golden brown. Pour this mixture into the kheer before serving.
