Ingredients
– 2 medium carrots, grated
– 1 medium courgette, grated
– 200 g halloumi cheese, grated
– 1 cup plain flour
– 2 eggs
– 1 teaspoon baking powder
– Salt, to taste
– Pepper, to taste
– 1 tablespoon olive oil, plus extra for frying
– Fresh parsley, chopped (optional)
Method
1. Start by grating the carrots and courgette into a large bowl.
2. Add the grated halloumi, flour, eggs, baking powder, salt, and pepper. Mix everything well until combined.
3. Heat a non-stick frying pan over medium heat and add some olive oil.
4. Spoon small amounts of the mixture into the pan, forming fritters. Cook for about 3-4 minutes on each side until golden brown.
5. Once cooked, drain on paper towels and serve with fresh parsley if desired.
