Ingredients
– 2 cups grated carrots
– 2 cups grated courgettes
– 300 g halloumi cheese, grated
– 1 cup plain flour
– 4 eggs
– 1 tsp baking powder
– 1 tsp dried oregano
– 1/2 tsp salt
– Black pepper to taste
– Oil for frying
Method
1. Start by grating the carrots and courgettes into a large bowl.
2. Add the grated halloumi, flour, eggs, baking powder, oregano, salt, and pepper. Mix until everything is well combined.
3. Heat a generous amount of oil in a frying pan over medium heat.
4. Spoon the mixture into the hot oil, flattening each fritter with the back of a spatula.
5. Cook for about 4-5 minutes on each side until golden brown.
