Ingredients
250 g dried pasta
100 g pancetta or crispy bacon, chopped
2 large eggs
2 egg yolks
100 ml heavy cream
100 g grated Parmesan cheese
Salt, to taste
Freshly ground black pepper, to taste
Fresh parsley, chopped
Olive oil, for cooking
Method
Start by cooking the pasta according to the package directions in a large pot of salted boiling water.
While the pasta cooks, heat a little olive oil in a frying pan over medium heat and add the pancetta or bacon. Cook until crispy, about 5 minutes.
In a bowl, whisk together the eggs, egg yolks, heavy cream, and Parmesan cheese. Season with salt and lots of black pepper.
Once the pasta is ready, reserve a cup of the water before draining. Immediately add the hot pasta to the pan with the bacon. Mix well.
Pour the egg mixture over the pasta and stir quickly, adding reserved pasta water as needed to make the sauce creamy. Garnish with parsley before serving.
