Ingredients
4 chicken breasts
1 cup cherry tomatoes, halved
1 cup fresh mozzarella balls, drained
½ cup fresh basil leaves
2 tablespoons olive oil
1 teaspoon balsamic vinegar
Salt, to taste
Pepper, to taste
½ cup grated Parmesan cheese
1 teaspoon garlic powder
Method
1. Preheat the oven to 180°C (350°F).
2. Create a pocket in each chicken breast by making a slit on the side.
3. Mix together cherry tomatoes, mozzarella, basil, olive oil, balsamic vinegar, salt, and pepper in a bowl.
4. Stuff each chicken pocket with the tomato and cheese mixture, then sprinkle garlic powder and Parmesan on top.
5. Bake in the oven for 25 to 30 minutes until the chicken is cooked through and golden.
