Caldo de Queso (Sonoran Cheese Soup)
Ingredients
1 onion, chopped
2 cloves of garlic, minced
1 litre of chicken or vegetable broth
1 large potato, diced
400 g of diced tomatoes (canned)
240 ml of cream
200 g of cheese (preferably a melting cheese)
2 cups of corn (frozen or canned)
1 teaspoon of salt
Fresh cilantro, chopped (for garnish)
Method
1. In a large pot, sauté the chopped onion and minced garlic over medium heat until soft.
2. Pour in the broth and bring to a boil. Add the diced potato and cook until tender, about 10 minutes.
3. Stir in the diced tomatoes, cream, and corn. Simmer for another 5 minutes until heated through.
4. Add the cheese and salt, stirring until the cheese is melted and well combined.
5. Serve hot, topped with fresh cilantro.
