Ingredients

– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 medium carrot, diced
– 1 medium potato, diced
– ½ head of green cabbage, chopped
– 1 can diced tomatoes (400 ml)
– 1 litre vegetable broth
– 1 tsp dried thyme
– 1 tsp salt
– Pepper to taste

Method

1. In a large pot, heat a little oil over medium heat. Add the onion and garlic, cooking until soft.
2. Stir in the carrot and potato, and cook for about 5 minutes until they start to soften.
3. Add the chopped cabbage and cook for another 5 minutes, stirring occasionally.
4. Pour in the diced tomatoes and vegetable broth. Season with thyme, salt, and pepper. Bring to a boil.
5. Reduce heat and let the soup simmer for 20 minutes until all vegetables are tender.
