Method
1. Start by cooking the chopped bacon in a large skillet over medium heat until it becomes crispy.
2. Remove the bacon and set aside, leaving the grease in the skillet.
3. Add olive oil and onion to the skillet. Sauté until the onion is soft, about 3 minutes.
4. Stir in the diced potatoes, salt, pepper, garlic powder, and bacon. Cook for another 5 minutes, mixing well.
5. Add cabbage, chicken broth, and apple cider vinegar. Cook for 15 minutes until everything is tender, stirring occasionally.
