Ingredients
– 1 medium butternut squash, peeled and diced
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 4 cups vegetable broth
– 1 apple, peeled and diced
– 1 cup cream
– Salt to taste
– Pepper to taste
– Olive oil for cooking
Method
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Sauté until softened.
3. Stir in the diced squash, apple, and cumin. Cook for a few minutes.
4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the squash is tender.
5. Blend the mixture until smooth. Stir in cream and season with salt and pepper.
