Brussels Sprouts with Pancetta and Grapes
Ingredients
500 g Brussels sprouts
200 g pancetta, diced
1 cup red grapes, halved
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon balsamic vinegar
1 tablespoon honey
1/4 cup walnuts, chopped
1/4 cup parmesan cheese, grated
Method
1. Preheat the oven to 200°C.
2. Prepare the Brussels sprouts by trimming the ends and cutting them in half.
3. In a large bowl, mix the sprouts, diced pancetta, olive oil, salt, and pepper.
4. Spread the mixture onto a baking sheet and roast in the oven for 20 minutes.
5. After removing from the oven, stir in the grapes, balsamic vinegar, honey, and walnuts. Top with parmesan cheese before serving.
