Ingredients
1 cup brown sugar
1/2 cup softened butter
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup milk
Method
1. Preheat the oven to 180°C. Grease a loaf pan with butter or line it with baking paper.
2. In a mixing bowl, cream together the brown sugar and softened butter until smooth.
3. Add eggs one at a time, mixing well after each. Pour in the vanilla extract and stir.
4. In a separate bowl, combine flour, baking powder, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture, alternating with milk until smooth.
5. Pour the batter into the prepared pan and bake for about 50-60 minutes or until a toothpick inserted in the centre comes out clean.
