Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 500 g broccoli, chopped
- 4 cups vegetable broth
- 1 cup milk
- 200 g cheddar cheese, grated
- 1 tablespoon cornstarch
- Salt and pepper to taste
- ¼ teaspoon nutmeg (optional)
Method
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic; cook until the onion softens.
- Stir in chopped broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer for about 10 minutes.
- Blend the soup until smooth. Return it to the pot and add milk, cheese, and cornstarch mixed with a little water.
- Season with salt, pepper, and nutmeg if desired. Cook until cheese melts and heats through.
