Ingredients

  • 8 large eggs
  • 1 cup spinach, chopped
  • 1 cup bell pepper, diced
  • 1 cup cheese, shredded
  • 1 small onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • Cooking spray or oil for the muffin tin

Method

  1. Preheat the oven to 180°C. Grease a muffin tin with cooking spray or oil.
  2. In a bowl, beat the eggs and add the chopped spinach, diced bell pepper, onions, and halved tomatoes.
  3. Mix in shredded cheese, salt, pepper, and garlic powder until well combined.
  4. Pour the egg mixture into each muffin cup, filling them about 3/4 full.
  5. Bake for 20-25 minutes or until the muffins are set and slightly golden on top.
