Ingredients
- 8 large eggs
- 1 cup spinach, chopped
- 1 cup bell pepper, diced
- 1 cup cheese, shredded
- 1 small onion, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- Cooking spray or oil for the muffin tin
Method
- Preheat the oven to 180°C. Grease a muffin tin with cooking spray or oil.
- In a bowl, beat the eggs and add the chopped spinach, diced bell pepper, onions, and halved tomatoes.
- Mix in shredded cheese, salt, pepper, and garlic powder until well combined.
- Pour the egg mixture into each muffin cup, filling them about 3/4 full.
- Bake for 20-25 minutes or until the muffins are set and slightly golden on top.
