Ingredients
– 400 g firm tofu, drained and pressed
– 1 tablespoon vegetable oil
– 1 cup sliced onion
– 3 cloves garlic, minced
– 1 tablespoon fresh ginger, minced
– 1 cup vegetable broth
– 3 tablespoons soy sauce
– 2 tablespoons maple syrup
– 1 tablespoon rice vinegar
– 1 cup chopped bok choy
Method
1. Start by cutting the tofu into cubes.
2. Heat the oil in a large skillet over medium heat. Add onion and sauté for about 5 minutes, or until softened.
3. Mix in the garlic and ginger, cooking for an additional minute.
4. Pour in the vegetable broth, soy sauce, maple syrup, and rice vinegar. Stir the tofu gently into the mixture and let everything simmer for 10 minutes.
5. Add bok choy and cook for another 5 minutes, until it’s tender.
