Delicious Braised Kimchi (Kimchi Jjim) Recipe – Authentic Korean Comfort

Ingredients

– 500 g of kimchi (preferably well-fermented)
– 300 ml of water
– 2 tablespoons of soy sauce
– 1 tablespoon of sugar
– 1 tablespoon of sesame oil
– 1 tablespoon of minced garlic
– 1 teaspoon of red pepper flakes (optional)
– 3-4 green onions, chopped
– 150 g of pork belly or beef, cut into small pieces
– 1 carrot, sliced

Method

1. Start by placing the kimchi in a pot. Add the water, soy sauce, sugar, sesame oil, garlic, and optional red pepper flakes to the pot.
2. Stir everything together to mix well. Bring the mixture to a gentle simmer over medium heat.
3. Once it starts to simmer, add the pork or beef pieces and sliced carrot. Cook for about 15 minutes, stirring occasionally.
4. After meat has cooked through, add chopped green onions and let it simmer for another five minutes.
5. Serve hot with rice or enjoy it as a side dish.
