Ingredients
– 1 kg beef chuck, cut into chunks
– 1 tablespoon olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 2 carrots, sliced
– 2 cups beef broth
– 1 cup red wine
– 2 tablespoons tomato paste
– 1 teaspoon dried thyme
– 1 bay leaf
Method
1. Heat olive oil in a large pot over medium heat.
2. Add the diced onion and minced garlic. Sauté until they’re soft.
3. Place the beef chunks into the pot. Brown them on all sides.
4. Pour in the beef broth and red wine. Stir in the tomato paste, thyme, and bay leaf.
5. Cover the pot and let it simmer on low heat for about 2 hours, or until the meat is tender.
